Our review:

In Naples pizza is a very serious thing, particularly since the media attention increased and focused on pizza chefs that promoted this popular dish at a high level. Maybe San Giorgio a Cremano is not Naples, but we assure you that in the pizzeria of the Salvo Brothers, Francesco & Salvatore, you can taste one of the best Neapolitan pizzas and this in a contest, where every single detail has been taken care of in an almost maniacal way.

The Salvo Brothers succeeded in restyling the menu as well as the restaurant without losing their roots maintaining though the craftsmanship of their product. Using a blend of flours that has especially been customized for them together with a ridiculously small quantity of baker’s yeast and a hydration that exceeds 60% the brothers created a top dough that easily melts in the mouth and that is very digestible and has never been put into a refrigerator. In search of extraordinary ingredients for their pizzas the Salvos involve many producers and renowned chefs bringing back to the top popular recipes using different extra virgin olive oil for the toppings in order to garnish their excellent doughs.

The loop closes with a wide range of fried food that astonish for their lightness. Extraordinary professionalism of the waiting staff (thanks to internships in renowned Italian restaurants). A last positive mention goes to the amazing wine and beer list and to the extraordinary fried “zeppole” for dessert.
