Fried food has always been an institution in Neapolitan cuisine, and this is also the case in our pizzerias in Naples and San Giorgio a Cremano. The “friggitoria” is a great boast for us, because it is a tradition as rooted in us as that of pizza.

In fact, fried food is an integral part of the Neapolitan gastronomic culture in all its forms: from the classic Neapolitan fried pizza, filled with buffalo ricotta and cicoli (or greaves), to the inevitable crocchè (tater tots), with smoked buffalo mozzarella, potatoes and Pecorino Romano (roman sheep’s cheese), passing through the baccalà (salted cod), which is fried in a batter made of rice flour.

But we could not miss in our menu little omelettes of pasta and potatoes, with smoked buffalo mozzarella and Parmesan, as well as little omelettes of pasta with ham, Pecorino Romano and béchamel with alpine butter.

Of course, a good friggitoria cannot be separated from one of the most popular fried food in Italy, the arancini (fried rice balls): ours are stuffed with arborio rice, San Marzano DOP tomato sauce, smoked buffalo mozzarella and cooked ham.

Finally, if you want to treat yourself to a little delight, try our frittatine mignon (small fried delicacies): let yourself be tempted by the crunchiness of our fried polenta flakes, or – if you come to visit us for dinner – by our fried zeppole di pasta cresciuta (fried bread dough)!

The key to any good fried food is the first quality ingredients: at Salvo, we always choose only the best, from the mozzarella from the best dairies, to San Marzano DOP tomatoes, but also Parmigiano Reggiano, Pecorino Romano and Ragusano cheeses, which we use to offer you a quality fried food.

For us all the details matter, that’s why we carefully select our oils, but also the spices (such as dark red pepper from Sarawak), up to the butter from the mountain pastures that we use for our béchamel.
